Know how! Tips and tricks

When using superheated steam in wine cellars, pay attention to the fact that only saturated steam up to 110°C is used. This is how you can achieve optimal results from sterilisation or heating up of red wine mash.

The flow rates stated above refer to the heating of 1,000 litres of mash at ~85°C. For such tasks, you need about 70kg steam.

At lower target temperatures or higher initial
temperatures, the hourly flow rate will be correspondingly higher.
